Puri arrives as two towns at once: the Jagannath temple a few minutes inland, the Bay of Bengal the other way. MAYFAIR Heritage stands between them, set back from the sand rather than built on it. In the temple kitchen, earthen pots stack over wood fires, and what they hold, cooked without onion or garlic, is sold as mahaprasad at Ananda Bazaar, inside the outer wall. At the hotel, Two States by Kanika cooks both sides of the border, West Bengal and Odisha, at yellow tables under a Pattachitra frieze, and Firefly, cooking modern Indian, is the seat for sunset.

Step inside MAYFAIR Heritage and the noise of Puri falls away. Walkways wander between flowering shrubs to laterite cottages gathered like a village around an open choupal, and wide arches frame the sea. The day drifts from the pool to the lawn to the golden sand. In the evening artisans paint Pattachitra by the pool, and the whole place slows to their brushstrokes.

The Pilgrim Coast

Puri is one of the four holy dhams of India, gathered around the twelfth-century Jagannath temple whose summer chariots draw crowds in the lakhs. Its long golden beach runs beside the Bay of Bengal, and up the coast stands Konark, the thirteenth-century Sun Temple carved as a chariot of the sun.

The pleasant season is October to February, cool and clear for the shore, the temple town and the drive to Konark.
