At Bay Leaf, order Assamese: khar, an alkali filtered from burnt banana peel, opens a meal, and ou tenga, the elephant apple, sours the fish curry that ends it. In between come potato pitikas in mustard oil, duck with ash gourd, and short-grained joha rice. MAYFAIR Spa is in-house rather than a concession, and runs both Western and Oriental therapies: deep tissue, Swedish, reflexology and Balinese, with a steam room.

The City on the Brahmaputra

Guwahati spreads along the Brahmaputra where the great river narrows, the gateway to the north-east and one of India's oldest cities. On the hill above it stands the Kamakhya temple, among the most revered shakti shrines in the country, and Kaziranga and its rhinos are a morning's drive east.
