MAYFAIR Spring Valley Resort stands at Tepesia, in the low hills outside Guwahati, laid out through the valley instead of stacked above it, with a tea garden in view. At Bay Leaf, order Assamese: khar, an alkali filtered from burnt banana peel, opens a meal, and ou tenga, the elephant apple, sours the fish curry that ends it. In between come potato pitikas in mustard oil, duck with ash gourd, and short-grained joha rice. MAYFAIR Spa is in-house rather than a concession, and runs both Western and Oriental therapies: deep tissue, Swedish, reflexology and Balinese, with a steam room.
